If you're thinking, "Whaaat?! Chicken meatballs?!" Understand that it's not always about Italian beef meatballs, and there is room for other meat shapes to shine. While we expect all of our recipes will come out pretty good, this one actually knocked our socks off! Who knew a keto chicken piccata meatball could be so darn good!

Meatball Ingredients

  • 1 lb 92/8 ground chicken
  • 1 lb 80/20 ground pork
  • 3-4 TB olive oil
  • 1 tsp minced garlic
  • 1/2 cup grated parmesan cheese
  • Zest of 1 lemon
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ceylon cinnamon
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 Dash nutmeg
  • 1 tsp dried parsley
  • 1 tsp dried rosemary
  • 1 tsp dried sage
  • 1 tsp Redmond Real Salt
  • 1 tsp ground black pepper

 

Sauce Ingredients

  • 1 oz cream cheese
  • 4 TB Kerry Gold butter
  • 1/2 tsp minced garlic
  • 1/2 tbs Nu Naturals gelicious beef gelatin
  • 1 cup beef bone broth
  • 1/2 lemon juiced
  • 2 TB capers
  • Freshly chopped parsley

 

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Combine all meatball ingredients in a bowl by hand until well incorporated.
  3. Form into 2 inch balls and place in preheated skillet.
  4. Cook for 6-8 minutes, turning meatballs every 2 minutes to make sure they’re evenly cooked.
  5. Remove from pan and place onto a plate while you prepare the sauce.
  6. Reduce heat to low and combine all sauce ingredients in the pan. Stir well and then let simmer for 2-3 minutes to allow the cream cheese and butter to fully melt. Stir until gelatin is evenly distributed, then return meatballs to the pan and let simmer for another 5 minutes. Top with fresh parsley, and serve aside your favorite veggies!
